Rural America is full of unsung crafters—hard-working men and women, young and old, who deserve their fair share and find it hard, if not impossible, to compete in today’s marketplace. To that end, many of the products we sell on our website, or in stores “come with a face”—you can “meet” or “get to know” the person behind the product. As the concept grows and you see our Project F.A.R.M. label on more and more products nationwide, you’ll know you’re supporting rural people like Miss Wilma and Friends of Kentucky (who boasts she has burned up seven sewing machines making pillows for us), or the women of rural Idaho who sew our “Farmgirl at Heart” tote bags, or the people of Shiner, Texas who fabricate the products in our wireline. In this video, see how Project F.A.R.M. helps support three local families.

Budget Mix Biscuits
Learn how to make biscuits using our Budget Mix with farmgirl Julie Bell. (Note: Julie's batter biscuit recipe is a Southern favorite that is moist, but difficult to handle for some cooks. Because it's a recipe worth mastering, you should watch our video of Julie showing you how to work the moist dough. But if you'd rather make a standard, basic biscuit using our Budget Mix, here are MaryJane's tried-and-true recipes:

No-Fuss-Budget Biscuits
2 cups Budget Mix™
1 cup milk, buttermilk, or water
Yield: eighteen 2-inch biscuits

Preheat oven to 450°F. In a bowl, add the liquid to the Budget Mix and stir until a moist and sticky but not smooth dough forms. Do not overmix. Use a spoon to scoop apricot-sized dollops of batter; use another spoon for dropping the batter onto a greased cookie sheet, spacing the biscuits 1 inch apart. Bake for 10 minutes or until bottoms are a light golden brown. Serve hot.

For traditional rolled biscuits, cut 5 tablespoons cold butter into Budget Mix until pea-sized before adding liquid. Decrease liquid to 3/4 cup. Transfer the smooth dough onto a lightly floured surface and roll out to 1/2-inch thick. Cut out 2-inch rounds. Bake on an ungreased cookie sheet as above.

For no-cholesterol biscuits, use 1/3 cup olive oil instead of butter. Drop by spoonfuls onto an ungreased cookie sheet. Bake as above.

For shortcake biscuits, add 1 tablespoon sugar. Use cream for added richness. Cut 3-inch rounds and drop onto ungreased cookie sheet. Bake as above (yields twelve 3-inch biscuits).
